Grilled Cocoa Spiced Salmon
This is an interesting dish as the cocoa, mustard and spices that are full of flavour make a fantastic dry rub for salmon.
This recipe for Grilled Cocoa Spiced Salmon is amazing on the barbeque but can be grilled or cooked in the oven, so don’t worry we don’t have to wait for the summer to enjoy this recipe.
In this recipe I have used dry mustard and you can make up the mustard into a sauce that can be served alongside the salmon.
I served this salmon dish with new baby potatoes and mange tout and baby sweetcorn to add colour.
Ingredients for Grilled Cocoa Spiced Salmon
- 1 fillet of salmon per person
- 2 tablespoons olive oil
- 1 teaspoon dry mustard
- Large pinch cinnamon
- 1 tablespoon paprika
- 1 teaspoon cocoa powder
- 50g/ 2oz chilli powder
- 1 tablespoon ground cumin
- 2 teaspoons freshly ground pepper
- For the mustard sauce:
- 50g/ 2oz dry mustard
- 50g/ 2oz sugar
- 2 tablespoons hot water
How to make Grilled Cocoa Spiced Salmon
Put the grill on to heat at a medium to high heat
Smear 1 tablespoon of olive oil onto a tray
Stir together all the dry ingredients until they are well combined
Rub the other tablespoon of oil into both sides of the salmon
Place the salmon skin side down onto the oiled tray
Sprinkle the other side of the Salmon generously with the dry ingredients and pat down
If you have any of the mixture left it will keep in a glass jar for up to 6 months
Grill the salmon for about 10 minutes per inch thickness or until the salmon flakes with a fork
Try not to overcook the salmon as it will become dry
To make the mustard sauce: Whisk together the mustard, water and sugar until smooth
Serve with new baby potatoes
Makes a great dish when barbequed and served with salad Delicious!
