Recipe For Chocolate Sherry Truffles
These Sherry Truffles make a change from the traditional Rum Truffles and would be lovely around Christmas time.
Ingredients for Chocolate Sherry Truffles
- 100g/4oz plain/dark chocolate
- 50g/2oz butter
- 1 tablespoon Sherry
- Yolks of 2 eggs
- 25g/1oz ground almonds
- 25g/1oz stale bread crumbs
- 225g/8oz sifted icing sugar
- Drinking chocolate
How to make Chocolate Sherry Truffle
Break the chocolate and place in bowl along with the butter over a pan of hot water.
Leave until both have melted, stirring occasionally.
Add the Sherry and egg yolks.
Stir in the remaining ingredients, except the drinking chocolate.
Pour mixture onto a plate and leave to cool this usually takes between 1 – 1 ½ hours.
The mixture should be firm at this stage.
Roll into equal amounts, you should get about 36 truffles depending on the size you make them.
Toss in the drinking chocolate.
Place into paper sweet cases or petit four cases, you can find these at any supermarket.
Safe to freeze for 1 – 2 months
