Recipe For Chocolate Fudge
This recipe for Chocolate Fudge is one that is a favourite with everyone and makes a great homemade gift when placed in a decorative box.
Ingredients for Chocolate Fudge
- 300ml/½ pint milk
- 800g/1lb 12oz granulated sugar
- 100g/4oz butter
- 2 teaspoons vanilla essence
- 100g/4oz grated plain/dark chocolate
How to make Chocolate Fudge
Melt the grated chocolate in the milk and bring slowly to the boil.
Add the sugar and butter.
Heat slowly, stirring all the time until the sugar dissolves and the butter melts.
Bring to the boil.
Cover the pan with a lid and boil for 2 minutes.
Uncover, allow to boil, stirring occasionally for 10 – 15 minutes.
You can test when the mixture is ready by dropping a little of the mixture into a cup of cold water, it should then form a soft ball when rolled between your finger and thumb.
If you are using a sugar thermometer it should read 115° - 116°C or 238° - 240° F.
Remove from heat.
Stir in the vanilla essence.
Leave the mixture to cool for 5 minutes.
Beat the fudge until it just begins to lose its gloss and is thick and creamy.
Transfer to a buttered 18cm / 7 inch square tin.
Mark into squares when cool, you should get around 50 pieces depending on the size you want them.
Cut up with a sharp knife when firm and set.
Store in an airtight tin.
Safe to freeze will keep for 1 – 2 months.
