Chocolate Coconut Sweets
I love homemade sweets, probably because as a child we used to spend hours making our own truffles and sweets to give as gifts to relative, it's a fantastic childrens activity and will keep them am,used for ages..
These Chocolate Coconut Sweets are fairly easy to make, although they are a bit time consuming but they are really worth the work as they look terrific and taste divine.
I like to put favours on the table when having a dinner party and these Chocolate Coconut Sweets will do that job perfectly or they can be served after dinner along with coffee just the thing to round up your dinner.
So whether you are making these as a gift or for yourself try them out and if you don’t like coconut you can substitute the coconut with finely chopped almonds instead or why not make some of each.
Decoration ideas: press a chocolate chip into the centre of each ball, or a sliver of almond before they set or for a more elegant touch try sprinkling edible glitter over them.
Ingredients for Chocolate Coconut Sweets
- 50g/ 2 oz margarine
- 225g/ 9oz icing sugar
- 200g/8oz desiccated coconut or if you’re using chopped almonds use 150g/6oz
- 60ml cream
- 6-8 oz dark/plain chocolate chips
- 25g/ 1oz solid vegetable oil
- Petit four or paper sweet cases
How to make Chocolate Coconut Sweets
Melt margarine and stir in the icing sugar, coconut or almonds and cream.
Allow to cool so it's easy to handle.
Melt chocolate chips and vegetable oil in a bowl over a pan of hot water stir occasionally until the chocolate melts
When the chocolate mixture is melted, spoon into paper cases, filling each one about halfway.
Scoop a small amount of the coconut/sugar mixture into your hand and roll into a ball.
Press the ball down into the chocolate, so that the chocolate rises up on the sides.
Allow to set
Decorate as you choose
